Chef & story

Chef Raymond and the Story of Cebollajo

Chef, host and hospitality entrepreneur in La Ventana — Raymond creates a close, personal experience for every table.

Where the name comes from

Cebolla and ajo — onion and garlic — are how Raymond begins many of his recipes.

Born inside Casa del Tío

Cebollajo began as Raymond and his team cooked for guests and groups arriving for yoga retreats, ocean safaris, ceremonies, hiking and mountain biking.

Its own concept

It shares the Casa del Tío property, but Cebollajo is a dining concept of its own — open to hotel guests and outside visitors alike.

Inspired by Oaxaca

Oaxacan roots, ingredients and techniques — nixtamal, mole, mezcal — reimagined with the sea and desert of Baja.

Local ingredients

Fish from the Sea of Cortez and produce from La Ventana, Los Planes, Pescadero and La Paz.

Hospitality first

The feeling of dinner at the home of an uncle who cooks extraordinarily well: warm, relaxed, surprising.
